Scrambled Egg with Fried Bottle Gourd Peels (Lau er Chukla Bhaja)

Generally we always take the white portion of bottle gourd but have you ever thought about the peels. I learnt this from my mother-in-law which I would like to share.
Here is a simple recipe which you may try at our home.

Ingredients:

1. Fresh peels of bottle gourd
2. Egg - 2nos
3. Onions(medium) - 1nos
4. Green Chillies - 5-6 nos
5. Black cumin- 2-3 pinch
6. Turmeric powder - 1 teaspoon
7. Red chilly powder - 1 teaspoon
8. Oil
Salt to taste.





Chop peels of bottle gourd, onions, green chillies, brinjal seperately. Crack the eggs and beat them till they turn yellow. Add 1/4 tsf of turmeric powder , 1/4 tsf red chilly powder and salt to taste to the beated egg.Keep it aside.Boil the peels of bottle gourd in a pressure cooker (4-5 whistles). Take out the boiled peels and drain the water fully.

In a wok fry the chopped brinjals. When the brinjals are red pour the beated egg and fry the mixture. Donot fry egg to red. It should be soft.





Pour oil in the wok. Add two pinch of black cumin seeds. Add green chillies and boiled peels of bottle groud.Add 1/2 tsf turmeric powder , 1/2 tsf red chilly powder , salt to taste and keep stirring the peels. When the peels get half cooked add the chopped onions and stirr till it turns yellow.Add previously cooked brinjal-egg mixture to the cooked peels.Stirr till everything get mixed well.Enjoy with hot pulses and steamed rices.
